Beef Short Rib Pastrami - Joe Cali
This cookoff was the winner of the 2019 Greatest Meats and Eats. Awesome Beef Rib idea with a great pastrami twist from Joe Cali.
HOW TO MAKE IT
Clean Beef Short Ribs and allowed to brine for 5 days.
Rubbed down with ⅔ Harvey's Salt No.3 and ⅓ Pastrami Rub then cooked for 12hrs at 250℉ unwrapped the entire time with
Ironbark rolling through the offset smoker.
Texture was something I've never had and flavour was amazing for such a simple cut of meat.
Well worth the effort.
