Herbed Lamb & Cous Cous
Ingredients
- 12 lamb cutlets
- 40 gr Herbs & Honey BBQ Rub
- ½ red onion
- 1 head corn
- 1 cup cous cous
- 1 cup chicken stock
- 2 tbsp butter
Instructions

Boil kettle or heat chicken stock to a boil.

Lay Lamb Cutlets on tray and season with Herbs & Honey BBQ Rub and allow to come to room temperature.

Using a sharp knife cut corn kernels from head.

Using a stainless or glass bowl add one cup cous cous, corn and butter. Pour over hot stock and then cover bowl with a plate or cling film, set aside on bench for 10 minutes.

Fine chop red onion - you can add any vegetables at this point including tomato, cucumber, red pepper, dates and green herbs as desired.

Unseal bowl with cous cous and using a fork separate the cooked cous cous till loose. Then add chopped vegetables and herbs and mix together.

Heat a lightly oiled pan until smoking hot.

Brush excess salt off lamb and place in hot pan. Most Lamb Cutlets will only require 1-2 minutes either side for a perfect medium. Allow to rest after cooking for 4 minutes.

Serve with your fragrant cous cous and a drizzle of olive oil.
