Making cured fish is actually quite a simple exercise and allows you to flavour and create a product that can be enjoyed by everyone. There is nothing better than homemade cured salmon with some personal flavour touches.
This recipe roasts a lamb leg with the bone for full flavour and the chance to season and flavour the meat. This little lamb went on to feed the family in tacos, BBQ Lamb rolls and finally onto a lamb and goats cheese pizza.
We developed this recipe to create a bacon that was perfect for adding an extra element to sauces and found that it just went well with everything - salads, pasta, breads, breakfast and dare I say it dessert.
